Ok but is there a word for a humanoid monster stitched together from disparate human parts? Cause the fact that there isn't makes me think that calling such a thing "a frankenstein" is just good linguistic development.

You don't need to spell out "stitch together from disparate parts" - there's a verb for that: "frankenstein".
You could just ask, is there a word for when you frankenstein human parts? To which the answer is, yes. A frankenstein.
